Chef’s counter seating to watch the kaiseki dishes be prepared in a modern-day Seattle restaurant. WA’Z offers intricate market-to-table dishes that gives adventurers full access to see how chef’s make the meticulous kaiseki plates… even giving history lessons during the creation process. Though small in space, the Japanese ambience restaurant does a great job at not overdoing the main floor with simple decor. Black and white dominate the color pallet, with a long wooden bar for travelers to sit at. From the outside, WA’Z looks like a Japanese garden oasis. Big glass windows with black trim have a small-town Tokyo vibe to it. There’s numerous kaiseki dishes to choose from, but a favorite is the A5 beef course. - Jordan Dietterich of Surfside, Florida
